This coming November 11, 2015 marks Veterans Day in the U.S. and Remembrance Day in Canada. Traditionally, both holidays pay honor to military personal and veterans who served in all wars. 1. Frugal Veggie Stew

Meatless Mondays were first established during WWI. The idea was to focus on local food while also conserving food stores in order to support the troops. For this reason food preparation was all about reducing wastefulness and stretching less than fresh veggies—like potatoes, carrots, cabbage, cauliflower, onions, tomatoes, parsnips, corn, peas, or whatever you had on hand or as leftovers into a frugal vegetable stew, like this one.
